PhD Student in Food Structure Engineering and Solid-State Fermentation

We are seeking a highly motivated and curious PhD student to join our interdisciplinary research team in the field of Food Structure Engineering with a focus on Fungal Solid-State Fermentation (SSF). In this project, we aim to transform lupins with fungi into sustainable, structured, and nutritious food sources. We collaborate with a local provider of Lupins; therefore, we can cover the direct transition from field to the final food product by leveraging our in-house structuring platforms.
Job description
- The design and optimization of solid-state fermentation systems
- The selection of fungal strains based on their potential to improve the nutritional profile
- The role of fungal metabolism in modifying food texture and nutritional profiles
- Strong internal collaboration with other PhD students working on machine learning and bioanalytical devices
Profile
- A Master’s degree (or equivalent) in Food Science, Biotechnology, Microbiology, Bioprocess Engineering, or a related field
- Strong interest in sustainable food systems and microbial biotechnology
- Experience with fermentation, food structure analysis, or fungal cultivation is a plus
- Excellent communication skills in English (written and spoken)
- A collaborative mindset and enthusiasm for interdisciplinary research
